Valladolid becomes the tapas capital every November as the host of the National Pinchos and Tapas Competition, the World Tapas Championship, and, parallel to both events, the International Tapas Festival. This allows residents and visitors to taste over 60 finalist proposals at the city's bars. With 18 editions under its belt, the Valladolid Tapas Competition is a renowned event in the field of small-format gastronomy. Come to Valladolid in November and discover the haute cuisine in a single bite.

The jury

Jurado - Concurso tapas

The jury of the XVIII National Tapas Competition was chaired by chef Francis Paniego from El Portal de Echaurren restaurant in Ezcaray (two Michelin Stars and three Repsol Suns). Additionally, he has achieved two more Michelin Stars and two additional Suns as the head chef of Marqués de Riscal (Eltziego, Álava) and Ibaya (Soldeu, Principality of Andorra), where he is also the executive chef and gastronomic director.

The jury also included Valladolid-born chef María José San Román (two Repsol Suns), the president of the Association of Chefs and Pastry Chefs of Madrid, Miriam Hernández, and the well-known Juan Pozuelo.

On the other hand, the VI World Championship had a jury chaired by Leonor Espinosa, named the best chef in the world in 2022 by The World's 50 Best Restaurants and the owner of Leo and El Casual restaurants in Bogotá, Colombia. She is also the president of FUNLEO, a non-profit organization dedicated to generating social well-being in rural ethnic communities. She won the Basque Culinary World Prize in 2017 for her work in this area. Nine Michelin Stars accompany Espinosa on this jury (Mario Sandoval and the Portuguese chefs Rui Paula and Henrique Sá Pessoa, each with two stars; Elena Lucas, Rocío Parra, and Lucía Freitas, each with one star). The jury is completed by the president of the Royal Academy of Gastronomy, Lourdes Parra; the vice president of the New Zealand Chefs Association, Jasbir Kaur, and Gloria Lucía Martín, a leading figure in our country's mycological cuisine.

Every year, the bars in the city enthusiastically participate in the National Competition and the World Championship. Thanks to the hospitality of Valladolid's establishments, residents and visitors can taste all the selected creations as finalists in both events at the International Tapas Festival.

Parallel to the competitions and throughout an entire week, nearly fifty bars and restaurants "twin" with those coming from outside the city, province, and even the country in the case of the World Championship, to serve the selected tapas in the largest live show-cooking event in Spain.

Furthermore, the weekend following the competitions, the venue for these events, the Cúpula del Milenio, allows residents and visitors to taste the winning tapas as a culmination of a week dedicated to the highest form of gastronomy in small bites.

The competition

The Millennium Dome is the venue for the National Tapas Competition in Valladolid. In this unique competition, which represents all the autonomous communities of the country, 46 tapas compete in the final phase. The main prize is awarded for the Best Tapas in Spain, with a prize of 10,000 euros sponsored by the organization. The second prize is awarded with 5,000 euros, and the third prize with 2,500 euros.

As for the World Tapas Championship, in 2022, 16 chefs from the five continents participated, representing Australia, New Zealand, the United States, Canada, Panama, Mexico, Ecuador, Slovenia, the United Kingdom, Malta, Portugal (represented by the winner of the country's II Tapas Competition), Spain (represented by the winner of the last national competition), Singapore, India, the United Arab Emirates, and Egypt.

Winners of the 2022 National Tapas Competition:

The winner of this edition was Ariel Munguía from El Puntido (Álava) with 'Cochino Bocado' (Pig Bite). As the winner of the competition, they will represent Spain in the upcoming World Championship. The second prize went to Carla Peyrón from the Enigma restaurant by Albert Adriá (Barcelona), while the third prize was awarded to the tapa 'Tómate un baño' (Take a Bath) by Alberto Montes, chef of Atrio (Cáceres).

The honorable mentions were given to '¡¡¡BacaÑuelo!!!' by Ana Rosa Lasheras (Café Restaurante Tizona, Logroño) as the most traditional tapa; 'Bollo de Maite-Quilla' by Mitxel Suárez (Borda Berri, Álava) praised for the best tapa concept, and 'Octópoda solo pulpo' by Rubén González (El Cafetín, Pontevedra), selected as the most avant-garde tapa.

Winners of the 2022 World Tapas Championship:

The winner was United Arab Emirates with the tapa 'Cijara Baba Ganoush' by chef Lendl Pereira from Hyat Centric restaurant. In second place, the tapa 'Ash dog' by chef Yee Tak Frederick Wong from Rte. Poni in New Zealand was chosen, and the third place went to 'Mar y Montaña' by chef James Russell from the United Kingdom's Mitchells & Butlers restaurant. The honorable mentions of the World Championship were awarded to 'Mordisco Atlántico,' a Portuguese proposal by chef Joana Duarte (Restaurant Pao con Canela), as the most traditional tapa; 'Salbut criollo,' the pincho by Alberto San José (Habanero Taquería, Valladolid), the Spanish winner of the 2021 National Competition, for the best tapa concept, and 'Ceviche de salmón' from Australia, created by Amber Heaton (Restaurant Cucina Vino), as the most avant-garde tapa.
